Cinco de Mayo is coming up this weekend, and to ensure that we are all ready I’ve put together a quick Cinco de Mayo recipe roundup.
Cinco de Mayo is a funny holiday that my family never paid much attention to growing up (and still doesn’t do anything special to celebrate), except for the rare time a few years ago when it fell on the same day as the Kentucky Derby. We are a guacamole-loving family and spectated a horse race outside of San Francisco a few summers before, so we got really into the combination and had a family Cinco de Derby party. Our party was complete with big hats, pimento cheese, guacamole, and salsa.
While we don’t have a large Cinco de Mayo celebration planned this year, I am excited to at least make a delicious Mexican-inspired appetizer (the avocado, citrus ceviche and the grilled corn with cotija cheese both look so delicious)!
