easter recipe ideas

A Good Friday to you! With Easter only a few days away, I have rounded up some dishes for your Easter brunch, Easter supper and Easter dessert. A lot of these recipes take a twist on traditional Easter and seasonal recipes, with what looks like resounding success. I love the creativity in some of these dishes, but the ingredients that still remind me of the dishes we have always had in the spring.

My family tried How Sweet Eats’ bacon blue cheese deviled eggs last year and they were just as delicious as they sound! I so badly want to make the carrot cake cinnamon buns and the citrus asparagus. Also, I will always have room for more of the carrot cake with Nutella swirled cream cheese frosting from earlier this week.

The Mornings:

Brunch: the best meal of the day. We have some great options.  Take a spin on the classic dessert with carrot cake cinnamon rolls topped with mascarpone glaze.  Don’t those look amazing?!  I want to reach into the picture and grab one for my own brunch.

On the healthier side, these breakfast carrot cookies would be another great twist on carrot cake.  For those of us who will be running out the door trying to get to the early Easter service on time, these would be perfect to have on hand.  Ahem, I don’t know who would be doing that.

This hot cross bun bake is great for large groups.  Better and more appropriate than a french toast bake, but still feeds a crowd when cut up in slices and buns.  Fluffy spiced bread soaked in nutmeg sauce look and sound like an incredibly delicious way to start the day.

Carrot cake loaf with nutella swirled cream cheese frosting is the perfect breakfast, snack and dessert this Easter and this spring. It's basically vegetable bread, right?

Carrot cake loaf with Nutella swirled cream cheese frosting; this one can go multiple ways.  Without frosting, it is basically the vegetable version of banana bread – great for breakfast and brunch.  Add the frosting and it becomes the best snack for that time between the church and the Easter egg hunt, before dinner, when you don’t know what to eat except all of the candy out of your Easter basket.  If you have better self control than me, you could hold out and have it for dessert.  Or your could just have it for all three. That is the best option here.

In true Southern fashion, deviled eggs are a staple at our Easter dinner.  Like I said, my family made these blue cheese roasted garlic deviled eggs last year and they were amazing!  We piped the yolk mixture into the hard-boiled whites and made them look like hatching chicks.  It was a bit more work than usual, but oh so adorable.  If you are looking for more deviled egg inspiration, here are 20 ways to devil your eggs, straight from the Southern source.

Asparagus is a delicious veggie to add to any spring meal.  I love asparagus and I get excited when I see bright green stalks at the table.  This lemony roasted asparagus looks fresh and sounds flavorful.  I want to try it so bad!

To get a few more vegetables on your table, try a salad with some carrot top pesto.  Instead of using arugula or another green, this dish gets a spring twist by using carrot greens in the pesto.  You can always change up the recipe to use your favorite greens, but if you are already using the carrots for your breakfast or dessert (which you should be), switch it up with the carrot greens! Not a fan of carrot greens?  Steam some snap beans and stir them up with some pistachio pesto.  So green and so great.

With all of the chocolate from your Easter basket, it might be helpful to take a look at this whole chocolate-inspired Easter menu on Crate and Barrel’s blog.  Yum.

Now for the sweet side of dinner.  I’m not a fan of peeps, but I could get behind these homemade strawberry earl grey peeps. Put earl grey in anything and I’m in.  Think about how much more impressive your Easter baskets would be next to all of those other store-bought neon marshmallows.  Talk about one upping.

These cheesecake eggs with shortbread sticks are so cute, and I can only imagine how delicious they taste. Shortbread is one of my favorite cookies at Christmas time, and it is a great idea to tie it to Easter with these beautiful “eggs,” since the holidays are so intertwined already.  I just want to take a spoon to those cheesecake eggs asap.

For a traditional dessert with a beautiful spring display, this speckled robin’s egg cake is a winner.  The speckles are created with splattered chocolate – how can you go wrong there?  Katie even has a great tutorial on how to make yours look as beautiful and impressive as hers, so you can really wow your relatives and friends.

Happy early Easter and happy cooking and baking to all!
