Let’s be clear – the original milk chocolate mini eggs are the best variety. The candy company has expanded their product line in the past few years to include dark chocolate eggs with darker colors (not springy), and new “shimmer” mini eggs. I’m not even going to bring the white chocolate version into the mix because I just don’t understand it. The dark chocolate took a while to get used to, and while they still aren’t my top choice I can appreciate them as a needed variety for the vast Cadbury audience. Shimmer and white chocolate? Unnecessary. Even with my strong feelings about milk chocolate mini eggs being far superior to the rest, these brownies would be amazing with whatever your favorite type may be. I mean, fudgy dense brownies with more delicious chocolate? Yes, please.

I have so many memories surrounding Cadbury mini eggs. Because of these memories and their short season in stores, I always try to snatch up a bag as soon as I seem them. Growing up, my mom’s favorite Easter candy was always Cadbury mini eggs. Each year my siblings, cousins and I would empty all of the candy from our Easter baskets into our own gallon ziploc bags to eat on the road trip home from our grandparents. Some of the leftover candy that didn’t make it into baskets filled bowls on the table for the adults to eat, but eventually we started getting my mom her own bag of Cadbury mini eggs to snack on in the car, to spare our own candy bags.

One of my college roommates was also a Cadbury mini egg aficionado. The first sight of the purple bags of pastel candy-coated milk chocolate comes perfectly timed around her birthday so I would sneak a bag into her cabinet to celebrate. To this day, whenever I see Cadbury mini eggs, I associate them with my mom and Alex, and it makes me want them even more.

Cadbury mini egg brownies are easy to put together before the weekend begins and will be just as good when you snack on them throughout the weekend or on Sunday after brunch. They are rich and super chocolaty and each bite of the chewy brownie is studded with crunchy chocolate mini eggs. You only need a little bite to quelch your chocolate craving, but they are so good that you might just eat half the pan. Not speaking from experience or anything.

Cadbury Mini Egg Brownies
1 cup flour
½ cup + 3 tablespoons dark cocoa powder
½ teaspoon salt
4 eggs
2 cups sugar
2 sticks butter, melted
1 tablespoon vanilla
1 cup chocolate chips
1 cup Cadbury eggs, chopped

Preheat your oven to 325 degrees F. Lightly spray a 9×9 (or 8×8)-inch baking dish with non-stick cooking spray.

Stir the flour, cocoa powder and salt in a bowl. Set aside.

In the bowl of an electric mixer, cream together the eggs, sugar, butter, and vanilla until well blended.

Add the flour mixture to the butter mixture and mix just until all the dry ingredients are moist and blended. Do not over mix.

Fold in the chocolate chips and ½ of the Cadbury eggs. Spread the batter evenly in your prepared pan and place the rest of the chopped Cadbury eggs on top. To make the top of the brownies pretty, make sure the colored coating is facing up.

Bake 30 to 40 minutes, or until the brownies are firm to the touch and a toothpick inserted into the center comes out almost clean. They will be slightly soft in the center when tested with a toothpick. Remove from the oven and cool 30 to 40 minutes before cutting.
