Oh these popsicles. Cherry frozen yogurt popsicles are sooooo easy to throw together and use only four ingredients (two of which are listed in the name). Of course, the day I photographed these popsicles, we had a weird fluke power outage – perfect conditions for a frozen treat. Can you hear my sarcasm through the screen?
It was a 90-something degree sunny day and I had just taken the popsicles out of the freezer. My options were to quickly photograph the frozen treats before it got too hot inside without the A/C running, or to stick them back in the freezer (which wasn’t cooling without power) where hopefully there was enough chill to keep them kind of frozen until the power came back on and they could refreeze. The second option would have been good, if I knew how long the power was going to be out, and therefore when I would be able to take photos after they were truly frozen.
Since I already had everything set up for the photos, I went with the first option and frantically took pictures as fast as I could before the cherry frozen yogurt popsicles all melted into a puddle in the heat. Things got messy fast as the kitchen began to heat up even more. It was definitely an unexpected adventure, and I was so relieved when I finished and put the melty pops back in the rapidly warming freezer. Of course, as these things go, the power came on an hour later.
I love these cherry frozen yogurt popsicles for many reasons. As I mentioned, they are so easy to make (10 minutes of prep time, max) and use very few ingredients. With frozen fruit and Greek yogurt as the base and only natural sweeteners for a boost, they are also a great healthy alternative to other cold desserts that we sometimes find ourselves craving on these warm summer days. They are like a smoothie in popsicle form! If you don’t have popsicle molds, you can also use ramekins to make individual servings, just let them thaw a little before serving so you can easily eat them with a spoon.
While I hope your power doesn’t go out while you are attempting to serve frozen dessert, I think these cherry frozen yogurt popsicles are worth the messy melting risk. Easy, healthy, and so satisfying, cherry frozen yogurt popsicles make a great frozen summer treat.
Cherry Frozen Yogurt Popsicles
Easy, healthy, and so satisfying, cherry frozen yogurt popsicles make a great frozen summer treat.
Ingredients
- 4 cups frozen cherries
- 1 cup plain full-fat Greek yogurt
- 2 tablespoons honey
- 2 tablespoons fresh lemon juice
Instructions
Place all of the ingredients in a food processor and pulse until smooth and creamy, or blend in a high speed blender on medium speed until smooth.
Pour the mixture into popsicle molds and freeze for 4-6 hours, or until firm and frozen.
