I can’t believe I’m giving you a “recipe” for toast. I’m almost sorry, but the flavors of this peach, basil, honey, and whipped ricotta toast are so good that I couldn’t pass up the opportunity to share it before the summer stone fruit disappear.
There is a coffee shop nearby that has a toast bar that stops serving toast at 11am. Every time I go, I just miss the toast deadline, so I am stuck admiring the tempting overpriced toast options on the menu without being able to try them. While not ideal, two good things about this situation are that 1. I’m not spending too much money on toast, and 2. I get to brainstorm easy toast ideas to make on my own at home. When a coffee shop can save me money and provide me good ideas that I know I can make just as well as they can, I’ll call it a win, though the coffee shop may not ;). This peach, basil, honey, and whipped ricotta toast came out of an 11:05am situation, when I wasn’t quite early enough to get a fancy coffee shop toast, but I could still grab a drink and make the same thing in my own kitchen.
The peaches, basil, ricotta, and honey are a great combination of flavors, but the idea of slapping it all on a piece of toast is so incredibly easy that it almost doesn’t warrant a recipe. Let’s look at it as inspiration and a jumping off point for more great toasts that you could try in the future ;).
I like the taste of ricotta on it’s own, but whipping it makes the texture so much smoother and more spreadable that I don’t know if I will ever go back to un-whipped ricotta again. If you don’t love the taste of ricotta, stay with me here. The sweet peaches and honey pair with the tangy ricotta and provide such a great balance, all with the background of the perfectly toasted piece of seedy bread that provides a great base for every combination of toppings. If ricotta on it’s own is too tangy or not sweet enough for you, add a few teaspoons of honey to it as it is mixing to amp it up a little bit.
Snatch up some sweet peaches and a few sprigs of basil while they are both still in season and make this toast as a tasty breakfast, delicious snack, or put it on mini toasts for a cute, fresh summer appetizer.
Peach, Basil, Honey, and Whipped Ricotta Toast
4 slices of bread, toasted
½ cup ricotta toast
a handful of fresh basil, chopped
honey, to drizzle
In the bowl of a food processor, add the ricotta and blend until it is creamy and smooth. Spread the whipped ricotta on your toast slices and top with peach slices, basil, and a drizzle of honey. Enjoy!
