memorial day treats

This has been one of those weeks where I can’t determine what day of the week it is. I went to a workout class on Wednesday night and the instructor said “happy Monday, we made it through!” before realizing that it was actually Wednesday, so I’m clearly not the only one. Maybe the expectation of the long weekend ahead is throwing us off. At least, we can place the blame on that ;) If you are like me and need some last minute Memorial Day weekend desserts for your cookout, potluck, or just relaxed evenings, I’ve got the list for you! Frozen desserts, s’mores bars, and berry swirls for your red, white and blue theme all made the list, now the only question is, which to make?!

Some of my favorite bundt cakes also happen to be filled with red and blue berries, fitting for the patriotic holiday weekend.

Memorial Day weekend is always a hot one in North Carolina. Sometimes frozen desserts are the most refreshing way to go!

No churn chocolate chocolate chip cookie dough ice cream
No churn roasted peach oatmeal cookie ice cream
No churn lemon gingersnap ice cream
Watermelon lime mint popsicles
Roasted apricot and Greek yogurt popsicles
Berry granola popsicles (naturally red, white, and blue!)
Roasted strawberries and cream popsicles (add some blueberries for a red, white, and blue treat!)

Last, but not least, we can’t forget the pies and bars! A cold slice of creamy pie or a square of s’mores bars are easy to share and perfect serve-yourself treats for long weekend gatherings with friends and family. Coconut cream pie is high on my list :).
